Blueberry Muffins

Serves 12

1 Cup old-fashioned oats

2 Medium bananas

2 Eggs

1/2 Cup almond milk (or any other non-dairy milk)

2 Tbsp Raw honey

1 Tbsp Melted coconut oil

1 1/2 tsp Baking powder

1/2 tsp. Baking soda

1/2 tsp. vanilla extract

Pinch of salt

3/4 Cup Fresh blueberries

Heat oven to 375 degrees. Place everything except the blueberries in a large blender for 15 seconds or until smooth. Fold in blueberries. Spray muffin tin with coconut oil and then pour batter into 12 muffin cups. Bake for 16 to 18 minutes, or until an inserted toothpick comes out clean. Enjoy!!
