Lettuce Wraps
SERVES 4
2 Tbsp. coconut oil, divided
1 Cup Cole slaw mix
1/4 Cup coconut aminos, divided
2 garlic cloves, minced
1 pound grass-finished beef
1 Tbsp. fresh ginger, minced
2 green onions, chopped
1/3 Cup broccoli florets
Sea salt and pepper, to taste
12 Butter lettuce leaves
1 Tbsp. sesame seeds
2 Tbsp. slivered almonds
Heat 1 Tbsp. of coconut oil in a large skillet and add Cole slaw and 1 Tbsp of coconut aminos. Sautés for 3 minutes. Remove from pan. Add remaining oil to pan. Add garlic and stir for 1 minute. Add beef and crumble while stirring. Add remaining coconut aminos and brown on all sides, about 4 minutes. Add Cole slaw back to pan with ginger, green onions, broccoli, salt, pepper and cook until beef is fully cooked, about 3 minutes. Sprinkle with sesame seeds and almonds. Portion beef into 4-6 portions and serve in lettuce leaves. Enjoy!
