Low Carb Fruit Pizza

Serves 10

Crust:

1 Egg

1/4 Cup Lakanto syrup

2 Tbsp Melted coconut oil

1 Tbsp Fresh lemon juice

1 tsp. Vanilla extract

10 Drops of liquid stevia

2 Cups Almond flour

1/2 Cup Coconut flour

1/2 tsp. baking powder

1/8 tsp. Salt

Heat oven to 350 degrees. Combine egg, syrup, oil, vanilla, lemon juice, and stevia in a bowl. In another bowl, combine flours, baking powder and salt. Add all dry ingredients to wet ingredients and stir. Using your hands may be easier to create a dough ball. Coat a 9 inch tart pan with cooking spray and press the dough inside. Using a fork, prick the top in 3 or 4 places. Bake for 15 minutes. Remove to cool and add toppings. Enjoy!!

Toppings:

1/3 Cup Coconut yogurt or CoCo Whip

1/2 Medium peach, sliced

3/4 Cup Fresh raspberries

1/2 Cup Fresh blackberries

1/4 Cup Fresh blueberries

(you can use any fresh fruit; including sliced kiwi, strawberries and pineapple)
