1 package of chicken sausage, sliced or out of casing (I use Gluten Free)
1 bunch broccoli rabe, washed and chopped into 3” segments
2 Tbsp grapeseed oil
4-5 garlic cloves, diced
1 1/2 cups vegetable stock (I like pacific brand)
Gluten Free or Rice Spaghetti
1 tsp red pepper flakes
1 tsp sea salt
2 Tbsp olive oil
Begin by boiling your water for the pasta. In a skillet sauté garlic in grapeseed oil for approximately 2 minutes. Add chicken sausage for 5 minutes. Slowly add vegetable stock during those 5 minutes of sautéing the sausage in order not to burn the garlic. Continue adding all vegetable stock. Then add broccoli rabe, red pepper flakes, sea salt and cover until broccoli rabe is cooked. You will know when it’s cooked because it will be bright green in color. Take off heat and top with remaining olive oil. Toss in the spaghetti and serve. Enjoy!
