Chickpea Quinoa Salad

Serves 1

3 Cups of spring mix or romaine lettuce

1/2 Cup of chickpeas (can of Eden, rinsed)

1/2 Cup cooked quinoa

1/4 Cup sliced olives

1/4 Cup cherry tomatoes

1-2 Tbsp of shredded mozzarella cheese (or whatever you like)

2 Tbsp any Primal Kitchen dressing

Chop lettuce and place in a bowl. Add all ingredients and toss. Enjoy!!
