Chickpea Salad

Serves 4-6

1 can chickpeas, Eden brand, rinsed

1/2 bag corn

1 red pepper, diced

1/2 red onion, diced

1 cucumber, diced

1 cup cherry tomatoes, cut in half

1 bunch fresh parsley, chopped

1 Tbsp. olive oil

salt and pepper to taste

freshly squeezed lime

Mix all ingredients together and refrigerate for 2 hours before serving. Enjoy!
