8 Cups of chopped dark salad greens

1 red onion, diced

1 small zucchini, diced

1 rep pepper, diced

2 carrots, diced

1 can chickpeas, rinsed and drained

Preheat oven to 400 degrees. Dice the red onion, zucchini, rep pepper, and carrots and place on a baking sheet. Spray with avocado oil. Sprinkle veggies with salt and pepper, to taste. Cook for 30 minutes. In a large bowl, add chopped dark salad greens and chickpeas. When veggies are done, cool and add to the salad greens. Drizzle with dressing.

Veggie Salad

SERVES 4-6

Dressing:

1/2 Cup hummus

2 Tbsp. fresh lemon

2 Tbsp. water

2 Tbsp. olive oil

1/4 tsp. garlic powder

salt, to taste

pepper, to taste
