Arugula, Avocado and Pepita Salad

SERVES 4

2 Bunches arugula, washed and dried

1 avocado, sliced

1 cup cherry tomatoes, cut in half

2 Tbsp. raw pumpkin seeds/pepitas (shelled)

Dressing Ingredients:

2 Tbsp. fresh lemon juice

2 Tbsp. olive oil

1 clove garlic, finely minced

sea salt and ground pepper to taste

Combine lemon juice and garlic in a small bowl. Slowly whisk in olive oil until creamy. Season with salt and pepper. Place arugula in a large salad bowl. Add 3/4 of the dressing and mix well. Add avocado slices, cherry tomatoes, and pepitas. Drizzle remaining dressing on top and toss gently. Enjoy!
